RARE AS HENS’ TEETH! Renaud Bruyère and Adeline Houillon are superstar young winemakers from the Jura who tend just 4.5 hectares of low-yielding vines growing on Triassic clay. Their production is miniscule. The duo’s 2017 Ploussard – a local Jura variety – is an elegant and ethereal red that’ll lift you high into the heavens. Much of Renaud and Adeline’s production is sold in two local bars; Bistrot des Claquets and Les Jardins de St-Vincent, in which locals and visiting Jura afficionados seek out this Ploussard for its purity and finesse. The grapes are hand-picked and separated from the bunches using a screen that they rub the bunches on (criable). The fruit thens undergo a type of carbonic maceration and, once the grapes have broken down, wild fermentation kicks in. The wine does its thing in tank for 32 days before being bottles without any filtration and without the addition of any sulphites. There may be a slight effervescence on opening from residual carbon dioxide, if you’re lucky ;)
