Patrick Sullivan - 2019 'Baw Baw' Chardonnay

Chardonnay from 30-year-old vines on the southern slope of the Bull Swamp vineyard, whole cluster pressed to a new 2000L oval vat. Spontaneous fermentation over 10 days with full malolatic taking place immediately post primary fermentation. This is a rich, luxurious wine oozing with with plush stone fruits, strong structure and savoury persistence. Good acidity keeps things fresh.
