A racy white wine that will most likely win the race. Fruits and florals with glimmers of citrus, seasoned with seaside salinity, angular acidity and minerals. Impossibly refreshing. Pair with fresh seafood and you'll be a happy chappy.
This is a marriage of 90% Grillo and 10% Catarratto from Val di Noto on the southern coast of Sicily. Organic, no herbicides, no treatments with chemical and/or synthetic fertilizers. All good stuff. Fruit saw 12 hours maceration, then drawn off and kept at room temperature for wild fermentation. Aged in stainless steel.
