2019 Opok White Blend
Opok — by biodynamic pioneers Maria and Sepp Muster — is an Austrian white blend awash with sea-shell purity, crystal clear minerality and soothing stoniness. It’s calm, gentle and smooth, with the comforting presence of an old friend. Keep an eye out for facets of citrus, oak and earth, alongside slight reductive smokiness. Just yum. Give it time, and understanding, and it might just tell you all its secrets. It's Sauvignon Blanc and friends from 15-year-old vines planted in the local 'opok' soil (limestone and clayey silt). After natural ferment, this wine spent 20 months maturing in wooden barrels. It's bottled without being clarified, filtered or adding sulphites. Maria and Sepp began their project in 2000 on 10 hectares of family land in the Austrian town of Styria, on the Slovenian border, and today their wines are famed for having exceptional mineral character and structure. Opok is testament to this.
