A favourite from the Manon farm, Pinot Gris berries were fermented in Pinot Noir juice for a short maceration period, before finishing the ferment in aged barrels. The resulting wine is a wine that is starshine bright, dances around style and simply sits on your tastebuds encouraging them to party. Bright and light and capable of smoothing over any bump. Manon Farm is run by Tim and Mon, perched high up (600 meters elevation) on the Forest Range ridge of the Adelaide Hills nestled between the Basket Range and Lenswood. The deep look down into the Gulf St Vincent below provides a cooling air over the farm from the ocean. This combined with the elevation results in an extra long, slow ripening period for the grapes and ideal growing conditions for their organic approach. There is a super abundance of quartz and mica (silica) in the vineyards, which makes for very mineral driven wines. On top of fifteen acres under vine, they grow around 100 mixed heritage and wild fruit trees to complement and further evolve the cider range. Manon make many different cuvées depending on the season and only produces wine from grapes that they have grown on the land they tend. They vibrate with the energy of the site, deeply special, thoughtful wines.
