Made By Monks - 2018 Pinot Noir

"Multi regional Tassie Pinot, from Tamar Valley, White Hills and Southern Tas Dover. 50% whole bunch, daily punch downs, pressed at dryness, old French oak barriques for 12 months. No adds; pinch of sulphur at bottling. Tamar fruit came in pretty ripe – it was a late pick scored at the last minute. Dover fruit is slow to ripen being so far south (furthest south site in OZ) and came in late season, from an organic dry grown vineyard. Dark and savoury favours. The name Sundew is in reference to the carnivorous plant/flower – the native Sundew species – which can be found in the Tasmanian wilderness, especially in the far south around Dover." – Luke Monks
