Mostly Chardonnay blended with Savagnin from south facing vineyards. Aged in well loved barrels for three years and topped up. Plenty of botanicals, snaking up through the liquid, menthol and acacia, a combination of both dried and sauteed citrus flecked with salinity. Plenty of botanicals, snaking up through the liquid, menthol and acacia, a combination of both dried and sauteed citrus flecked with salinity. There’s some quinine in there too, for refreshing bitterness. Ludwig ‘Lulu’ Bindernagel, previously an architect, got his upstart in Burgundy, learning the ins and outs of fine wine growing and vinifying. Of course, due to sky-high prices and inheritance laws surrounding the precious vines of Burgundy, instead of settling on someone else’s fruit he found his own in the gorgeous Jura. A solid recommendation for those who love to two-step between differing styles of textural white.
