Robert Surmann’s vineyard in Totness has 25 y/o vines grown on black sandy soil overlying petrified schist, it is VSP trained and spur pruned. The grapes are destemmed and left to rest for 5 days allowing the colour and flavour to bleed into the juice. Is then pressed fermented in 800L ceramic amphora for two weeks until there is the perfect amount of sugar to finish in bottle with a good level of spritz. Then aged on lees in bottle for four months and then disgorged." – Anton van Klopper
All of Anton's wines are made from organically farmed grapes, picked early for lower alcohol and vinified with zero additives. No chemicals are ever used in the winery – not even to clean (only water is used and occasionally alcohol which he distills himself). Wine for the purest of purists among you.
