Les Dolomies - 2018 'Les Combes' Chardonnay

Céline Gormally of Les Dolomies established her domain in 2008. Together with her husband Steve, she manages around 5ha of vines, employing biodynamic farming principles and eschewing mechanised methods – distributing natural composts between the vines with donkeys. The vineyard soils are largely composed of rich magnesium limestone, an ideal geological soil type for Jura gape varieties. All of Céline's wines are wild-fermented, with very little sulphur added, if any. She uses old Meursault barrels for maturation, with a scattering of demi-muids for the more delicate whites. Céline believes in the power of each individual plot, and bottles separately, to allow the individual voice of her vineyards to sing.

Les Dolomies 2018 'Les Combes' is made with Chardonnay from 70 year-old vines just below the town of Passenans. Fruit saw 18 months on fine lees in an old Meursault barrels, sans bâttonage. This is a rich and expressive wine, with some classic Chardy creaminess without being a 'classical' Chardonnay. It's lean and clean, with a good voltage of acidity bringing to mind lemon, lime, lychee and apple. Fine threads of minerality weave this beautiful drop together. Lots of stories to tell your tastebuds. A wow wine.
