If a wine is literally called - “F*** it’s good”, from one of the icons of the natural wine movement, you have to think to yourself - “F***, this is going to be good.” Full of spice, wood smoke and that glittery, mineral rich feel, the sometimes feral Trousseau really hits it’s own mark here. Carbonically macerated in fibreglass eggs, highlighting all of that crunchy red fruit flavour - as clear as a freshly polished car mirror. Céline Gormally started her beautiful Jura domaine under the ethos - “the earth is not ours; but lent to us by our children.” As such, the five hectares of fields she runs with her husband Steve are maintained without any chemical interference, and with a gentle touch. As former vice president and current member of ‘Le Nez Dans Le Vert’, she is a formidable advocate for organic viticulture. The name “Les Dolomies” refers to the limestone found in the area that gives the wines that mineral rich complexity, it also is incredibly porous, allowing for a reservoir of water underneath to nourish deep root structures. All wines are wild fermented, and with very little sulphur.
