The "ripasso" method is a traditional way of intensifying everything about a wine. When an Amarone della Valpolicella has almost finished fermenting, it is drained off its skins, which are then placed in a vat of Valpolicella (a lighter, fruitier wine than Amarone). When an Amarone della Valpolicella has almost finished fermenting, it is drained off its skins, which are then placed in a vat of Valpolicella (a lighter, fruitier wine than Amarone). The wine then goes through another fermentation, resulting in a Ripasso with more body, tannin and richer flavours. Stewed apricots, dried figs, red licorice, plum. Tobacco and leather. A perfect winter red. The L'Arco wine estate takes its name from an historic stone arch that is on the property; the “Arco di Giove”. It’s been there since the 1500’s. The winery was begun by Luca Fredigo, who studied under the legendary Veneto producer, Giuseppe Quintarelli. He was only 20, ambitious and passionate. He has seventeen acres of beautiful vineyards, within Valpolicella. These wines are a must try for people who adore richness, fruit and smoothness in their wines.
