The bunches are vinified whole and fermented in oak barrels for three weeks, aged for a year. Simple, thoughtful, Burgundy. This is the project from Oronce de Beler. Formerly a writer anda periodically working in advertising in Paris, he found himself seduced by the inimitable Vosne-Romanee, can we blame him? Before making wine himself, he first helped and fed those around him He developed a company that designed horse plows called Equivinum, and then fluidly transitioned to cross breeding Iberian-Corse free-range pigs, for more rustic, flavoursome charcuterie. In 2005, he started purchasing fruit and vinified in his tiny vaulted cellar, naturally, most often with no sulfur. They are ones to savour, showing some of the true smaller charms of Burgundy.
