Yuzu Kosho Red
Kosho is a fermented paste made from yuzu, salt and chilli. Need we say more?!
Located in Oita prefecture of Kyushu, Kushino Nouen grows both ingredients at their farm in a picture-perfect Japanese valley, where yuzu trees line the steep hillsides and chillies grow on the fields below. Kushino craft their kosho by salting and fermenting yuzu peel and chillies separately for a year. They are then gently ground (using no heat at all) and blended together, here with late season red chillies. Just a tiny dab of Kosho adds a HUGE flavour explosion to all kinds of dishes.
