The grapes for this wine were purchased from a vineyard in the area around the village of Adissan in the Hérault in southern France. Colombard and Bourboulenc macerated for a short time, then put to tank. Slightly wild, somewhat feral, in the nicest way. Plenty of preserved lemon, waxflower and waterlily, oily. They buy fruit from all of their wonderful friends around France and then vinify them in the Arbois, Jura. One to watch, for sure.
