Jean Bouteille - 2019 MAAR

What happens when Jean-Baptiste (aka Jean Bouteille) blends 100kg of Pinot Gris grown on schist and volcanic soil from Mount Gambier with 130kg of Cabernet Franc from a limestone coast vineyard and 580kg of Pinot Noir from two volcanic sites in Mount Gambier? MAAR! A mixture of whole bunch and destemmed fruits all thrown into a rolling wild ferment during 3 weeks, pressed slowly in a basket press then matured in seasoned French oak for 1 year. No additives; no sulphur. 

The name MAAR is used in geological dialect to denote 'crater', which represents the rolling ferment of this wine – where JB would throw in whatever grapes he could find out to keep the fermentation going. Maybe it also stands for Mighty Amazing Alcoholic Ride.
