Jaysen had some Viognier that he grafted over to Shiraz, given their birds of a feather relationship in genetics and also in historical blends. Fermented in cement, this Shiraz is red fruited and unfurls like rose petals looking for sun, sprinkled with pink peppercorns. Fresh and jubilant and oh so fun. Clean to suit any and all palates. Jaysen Collins has a subtle kind of celebritas. Those that can make some of the most sought after wines in the country, but still fly under the radar? That’s a rare bird. He has been making wine in the Barossa for over two decades, and the way he speaks about it, we don’t think he could be better suited for anything else. A deep love of the outdoors, the science, the getting dirty, the artistry, the guesswork and the pleasure of drinking and sharing and making wines day in, day out. The wines are made from beautiful vineyards and are rich and expressive and hearty. Iconic.
