'Aze' Agrodolce Balsamico di Modena
Founded by Marco Bertoni in the 1990s, Il Farneto is a tiny biodynamic farm of 34 hectares located in the hills of Scandiano and Canossa, in Emilia-Romagna. Sure, their wines are bellissimo, but their Agrodolce Balsamico di Modena is NEXT LEVEL. Seriously. When we tried it for the first time, we landed in sweet 'n sour sticky heaven. We even took it to the Italian chef next door, Luca, and he nodded in vigorous approval (Luca is very hard to please). It's handcrafted from organic cooked grape must added to a 5 year-old old base, acetified and aged in wood. Rich and luxurious, it vacillates seamlessly between sweet, caramelised figgy notes and tart undertones. We ate it by the spoonful; but you can add it to anything you like. 250ml.
