Holly's Garden - NV UberBrut
A jubilant, complex apéritif style méthod Champenoise crafted with fruit biodynamically grown high in the rich volcanic soils of the Whitlands plain in the Victorian Alps with carbon-negative farming methods. The base wine is a blend of 30% from a ten-year-old solera as well as a blend of 30% two-year-old Blanc de Noir juice, 30% one-year-old Blanc de Noir and 10% new Chardonnay juice from Hoddles Creek. Most of the free run juice is allowed to oxidise and ferment naturally and slowly in large old oak, with extended time before disgorgement adding richness to the wine. Complex flavours of grapefruit sourness and green strawberry are held in tension with a barely-there hints of umami, all delivered to your mouth via a constellation of dainty, invigorating bubbles. You can't not like this wine – it ticks ALL the boxes.
