2019 ‘Seaside’ Cab Franc
Fruit handpicked from an organic vineyard in Sellicks Hills, McLaren Vale. 50% of the grapes are destemmed and allowed to wild ferment on skins for 10 days, bringing out depth, structure and oomph. It’s then pressed into neutral French puncheons and left to mature for 12 months. The remaining 50% was destemmed and pressed after a few days on skins into neutral oak, and allowed to wild ferment, bringing out primary fruit aromas and elegance. These two components compliment each other perfectly to deliver a wine that's both concentrated and elegant, structured and smooth, dark yet bright, humble yet confident. Each sip takes you up to the clouds and back down to earth again. What a ride.
