2019 Les Agudes Blanc
When a young Fabien Jouves was contemplating leaving his quiet village of Trespoux-Rassiels to study medicine, his parents told him they would sell off the family vineyards. So, Fabien decided to study viticulture in Bordeaux instead, and in 2004 he began converting his family vineyards to organic farming. Shortly after, he pushed further into biodynamics, and today all plots are farmed biodynamically and all fruit is vinified naturally, without any additives. He may not have chosen medicine, but he did choose medicine for the soul :)
Les Agudes is a medley of white grapes that have been basking in the heat of the south in clay and limestone soils. Fruit was hand-harvested, destemmed and then direct-pressed in whole-clusters. Fermentation in stainless steel and barrel, then ageing for 6 months in a combination of stainless and wood, to maintain a balance of richness and edge. Bottled unfined, unfiltered. You're greeted with a blooming bouquet of white flowers and honey pretty enough to put in a vase. In the mouth, Meyer lemon meets ripe pear and peachy stone fruits, with a precide acid line snaking through. Fleshy, ripe and textural – everything you want, and more.
