
2021 Vermentino
From the ancient cambrian red soils of Mt Camel. Destemmed and fermented on skins for 6 days. Pressed to stainless to complete fermentation, left on ullage for 3 months, as an attempt to increase mineral and savoury notes. Racked once and bottled unfined & unfiltered. Lemon barley water, saline undertow & grainy phenolics.
