Entropy - 2019 Nebbiolo
Ryan Ponsford makes micro-batch wines from stunning chemical-free fruit in western Gippsland. This biodynamic Nebbiolo was picked as early as possible to retain freshness, then wild fermented in whole bunches and left alone for a few weeks before being pressed. Aged in a single old puncheon and bottled unfined/unfiltered. It’s lifted and floral, with a surprising amount of complexity and structure. Youthful, bright, light and juicy, with a touch of Turkish delight-like confection and fine tannins. We dig it. A lot. ONLY 500L produced!!
