El Jolgrio Mezcal reflects this by creating a range of mezcals that best show the joy and celebration of Mexican traditions. Pechuga is produced from wild-harvest Espadín Agave, in honour of the Virgen de la Candelaria (Virgin of the Candelaria) in the village of Santiago Matatalan, Oaxaca. The agave mash is twice distilled in a copper pot stills with winter/Christmas season fruits such as tejocote, banana, passionfruit and wild apples. On the second distillation, the breast of a Guajolote (Creole turkey) is suspended above the liquid (never touching), inside the still and cooked with the steam generated from the distillation. An important thing to consider when drinking this mezcal is that it is deeply culturally significant, it should only be consumed in moments of joy, celebration or remembrance.
