Dormilona - 2020 Skinnie Sauvignon Blanc

Translating as ‘lazy bones’ in Spanish, the name Dormilona is as evocative of Josephine Perry’s methods as it is also entirely unrepresentative of herself and her work ethic. The message here, of course, is a hands-off approach to making, but that ‘neglect’ is benign and underpinned by a rigorous approach to farming and fruit sourcing. This is particularly unusual in the region of Margaret River, famed for its larger, more conventional wineries. 

Sauvignon Blanc sings in Jo's 2020 Skinnie, as she pushes and prods the variety into a whole new octave. The fruit is crushed into amphora and open top bins, then left to wild ferment on skins for six weeks before bottling. Zero fining and filtration. Zero additions. Just pure, expressive juice, rippling with texture, personality and playfulness. Not your average savvy-b.
