An incredibly impressive Savignin from a new producer. It’s made in a “ouille” fashion, where the wines are topped up, rather than the traditional fashion of allowing them to be exposed to air. This brings out the Savignin fully - lemon, beeswax and lemon pie. Cedric Mottet is Domaine des Notes Bleues, founded in 2017. This brings out the Savignin fully - lemon, beeswax and lemon pie. Cedric Mottet is Domaine des Notes Bleues, founded in 2017. There’s only four hectares, mostly Chardonnay undervine, but little smatterings of Savignin and Trousseau to boot. The wines have a historical feel despite their youth, reverent of the winemaking tradition in the region, yet have an adventurous, rollicking kind of joviality to them too.
