"Grown by Hugh, at Humis Vineyard, Colbo, North Heathcote. Red dirt, organic viticulture. Pretty simple one really: 2 week maceration, destemmed. Pressed to a combo of old hogs, puncheon and barrique (mostly puncheon). Let it rest for 2 years (So much fruit and tannin!). Dashes of S02 after malolactic fermentation, at racking and at bottling (just 20ppm each time). 170 dozen made." – DBD
