The Crestan is a tilted view at the variety that is synonymous with Soave, Garganega. Salty, somewhat feral with heaps of peaches and lime. Great with a hard cheese and some anchovies. Hands off as much as possible. His philosophy is focussed on letting the fruits do their thing with as little intervention - spontaneous fermentation, no fining, no filtering and no sulphur.
