A wine awash with so many notes, it's basically an olfactory orchestra. Pretty treble meets earthy bass in this marriage of Merlot and Carignan, which were partially pressed before undergoing a three week maceration. Initial aromas of funk and pepper set the stage for cherries and wild berries. A lively effervescence kickstarts the concert in your mouth, which resounds with strawberry, savoury herbs, liquorice root, pepper, tomato leaf and green stems. As the temperature rises, the tune settles into notes of leather and tobacco. Standing ovation required.
Daniel Sage started winemaking in the Ardeche in 2011. His are some of the most highly sought after natural wines in the world. Daniel has small amounts of Gamay, Pinot Noir, Syrah, Chardonnay and Viognier, most from his vineyards in the hills of the northern Rhône. He also sources some grapes from his friend Jean Delobre and from other growers further south. Daniel employs a unique style of carbonic maceration, whereby whole bunches of grapes are sealed in unfermented juice, giving a bright, fruit character to the wines. Sulphur is never used. Wine for the purists among you.
