All peaches in the palate. Sicilian winery, COS, was founded by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. After many years and a death in the trio, it is now just Giusto Occhipinti is the main man at the head of this revered winery whose production dates back to the 1880s. Giusto’s vines sap up the hot, dry sunshine and minerally soil, and the fruit is always vinified in more traditional vessels such as amphora, concrete and old, large botti. Tradition has run in the family with his niece taking up residence in Sicilian winemaking lore too, the famed Arianna Occhipinti. You have not drunk Sicily until you’ve drunk COS.
