'This is a textural and intense wine with characteristic peachy-saline acidity from the clay soils. The fruit comes from the Clover vineyard; a tiny 0.5-hectare plot of 27-year-old vines, grown on red clay over sandstone. Dry-grown for five years. Fruit was whole-bunch pressed, then allowed to settle in tank for 12 hours before fermenting in seasoned barriques. The resulting wine was aged on full lees for seven months, in barrique, with bâtonnage once every two weeks for the first three months. Brandied into stainless steel tank and allowed to settle for two months before bottling (without preservatives) in November 2018. This vintage, ripening conditions were excellent for the white grapes with some rain at veraison followed by warm but dry conditions. It was the second year in a row that the white grapes were picked before the red grapes at Commune of Buttons. The warm, dry conditions resulted in good fruit concentration and aided the development of phenolic structure in the skins and seeds.' – Jasper Button
