Sable Vineyard is located in Blewitt Springs, McLaren Vale. It’s a deep, sandy-soiled site planted to six-hectares of old-vine (80 years old) Syrah and Grenache. The fruit was picked by hand on the same day, with the blend coming in at roughly 60% Syrah and 40% Grenache. The fruit was picked by hand on the same day, with the blend coming in at roughly 60% Syrah and 40% Grenache. The majority of the fruit is destemmed (just 10% bunches) and fermentation takes place over three weeks. The wine matured in fibreglass tank for 10 months before bottling. Gentle extraction has made for a light frame and structure. There is a plum and violet core, the tannins are fine from the sandy soils, and there is a refreshing lift with the long line of natural acidity. - Jasper Button, Winemaker.
