This is true, old school Italian orange wine. Full of stone fruits, honey, blossom and an almost sake-like kiss of umami. They are truly special in the glass, almost glowing with colour and vibrancy. The cultivation of vines is done according to lunar cycles with the utmost respect for nature, no chemicals, the earth is occasionally helped only with fertilizers obtained by the animals of the winery. During vinification only indigenous yeasts from the grapes and from the cellar are used, fermentation is spontaneous and takes place in large open vats with no temperature control while the wine is aged for 8 months in fiberglass. Collecapretta is one of the slew of Umbrian producers that are sneaking into the Australian market and charming the absolute pants off us. A tiny 4 hectares tended to by the Mattioli family, who have lived in the tiny hamlet of Terzo la Pieve since the Medieval era. The wines are humble and enchanting, it makes us dream of bucolic Italian sunsets and good pasta.
