Gamay d'Auvergne from vineyards on basalt in the northern part of Auvergne. Whole bunch fermented grapes with a few days of maceration then pressed into stainless steel before ageing in an older barrel. A kinda rose 'non rose' vibe to it, with incredible depth and complexity. A bit of raspberry and strawberry to rhubarb, citrus and spices. It opens with a little effervescence that disappears after a couple of swirls.Read More...
