2021 'Pop' Pink Pétillant Naturel
Gorgeous finesse and structure dwell in this blend of Shiraz (25%), Nebbiolo (60%) and Tinta Cão (15%). It's creamy and cuddly, yet still retaining fresh acid balance and tannin. Fruit was all farmed organically (though not certified) in Toppers Mountain in New England, NSW. Handpicked then wholebunch pressed to stainless steel and co-fermented wild. Bottled by hand at 18 g/l residual sugar. Undisgorged, unfined, unfiltered and preservative free. 684 bottles produced.
