A.R.C - 2019 Cabernet Merlot

When James and Jessica bought their farm in West Gippsland, the contract included Carson the sheep. Here he is on the label. This Cab Merlot feels like a fitting ode to an animal known for sociality and obedience – it's a quiet, gentle red that doesn’t provoke or challenge. Berries and plum, with zippy acid and fine tannin. Best enjoyed with a flock of your favourite people.

An even blend of Cabernet Sauvignon and Merlot picked on the same day, with 50% de-stemmed and 50% kept as whole bunches for a carbonic maceration. These grapes fermented in tank for 12 days with no plunging or pumping. Once pressed and blended they were moved to four old hogsheads before maturing on lees for 6 months. Unfiltered, unfined, unfiddled.
