In 1985, three clones of Gamay were planted high up in the Piccadilly Valley. A few years later due to its unpopularity they were grafted to Chardonnay. It wasn’t until 2013 that I convinced his grower mate Sam to chainsaw off the chardonnay grafts and bring back canes from the Gamay rootstock. Farmed organically. Handpicked mid-March. Half carbonic maceration for a lunar cycle and me playing a bongo naked for 66 seconds. Half whole bunch for 6 days with gentle cap submersion by hand. Pressed to one seasoned French puncheon, bottled unfined and unfiltered" – Taras Ochota
