'From the North' is 100% whole bunch Barossa Mataro from very low yielding, biodynamically farmed vines planted on sand in 1869. Grapes were handpicked mid-March, then cold soaked for 5 days and wild fermented. Gentle pigeage on top; carbonic maceration below. 8 days on skins and stalks then pressed to seasoned French barriques for 3 months before bieng bottled unfined and unfiltered.
