Domaine de Sulauze - 2016 Cochon
An homage to the tradition of wasting nothing on a pig, 'Cochon' is a Provencal red crafted with fruit not used in the domaine's rose. A gulpable fusion of 60% Grenache, 15% Cinsault, 10% Syrah, 10% Mourvedre and 5% Vermentino, all farmed biodynamically, fermented with wild yeasts and finished without filtration. Zero added sulphur; or anything. Exceptionally juicy and thirst-quenching – a gustatory tug-of-war between earthiness and fruitiness; boldness and brightness. There's a dark green flavour somewhere deep down too; like forest shade or grapevine. Way too moreish.
Karina and Guillaume Lefevre came to their domaine in Coteaux D’Aix en Provence in 2004 and immediately converted to organic viticulture before incorporating biodynamic farming. Today, the domaine is a winery, brewery and mixed-use farm. Living sustainably, the duo cultivates many varieties of grains for breads baked in an ancient oven, barley and hops for their beers, as well as farm animals, olive trees and a vast vegetable garden.
