The Hermit Ram - 2019 Skin Fermented Sauvignon Blanc

Theo Coles makes insanely pure 'pre-technology' wines from small chemical-free vineyards in North Canterbury, New Zealand. This orange wine is an extension of the Nattura Sauvignon Blanc process. The fruit is destemmed and fermented on skins for a month. The skins – which are worked very gently – provide aromatic abundance and a fine thread of phenolic to keep a tension and length in the final wine. The wine was bottled straight after natural malolactic with no addition of sulphur. It's cloudy and lively, full of citrus, passionfruit, salinity and stonefruit. So much clarity, it's like a pair of spectacles for your mouth.
