Junmai Daiginjo Domaine Taka Sake
A silky smooth Junmai Daiginjo sake crafted with Yamadanishiki rice grown within 5 kilometers of the Taka brewery in Ube, Yamaguchi, in fields tended by their own staff. The local soil is sandier than that of Hyogo, making for Yamadanishiki that is silky smooth in comparison to that region's rice. They use the name 'Domaine' to indicate the locally sourced production. This is Taka's flagship sake, made to evoke the brewery's terroir. It's clean, elegant, and refined with a balanced sweetness and umami. Hints of melon and lychee on the nose. Drink chilled or at a colder room temperature.
