Lemon pith, sherbet tang, marzipan, golden wattle and flint. Quince and nashi pear, laden with golden spices and almond oil. Delicious. Les Pargues is a Chablis lieu-dit situated on a ridge between Montmains and Vosgros, the story goes that this site was originally classified as a 1er Cru level vineyard (pre-AOC), before being largely abandoned during the war.

Finding vignerons in Chablis who are willing to move outside their comfort zone is a true needle/haystack situation. Of course Dauvissat and Raveneau have led the way for what we believe to be the heights of pure Chablis, but who has the budget for some of the rarest booze in the world? On our search to find accessible Chablis, whilst still maintaining electricity and vigour, our search led us to the late Stéphane Moreau. A student of Dauvissat, Dagueneau and Foucault, he is everything you want from great Chablis; old vines, prestige parcels and lo-fi winemaking. His partner now runs the estate and has maintained his formidable reputation across the examples of premium white Burgundy.
