In a former life Gabrio Bini was an eccentric architect in Milan. Today, he’s an eccentric winemaker in Pantelleria; a tiny rugged volcanic mass 100km south-west of Sicily, known for its capers and hot springs. While Gabrio makes otherworldly capers, his wine is the stuff of gods. Fruit from old vines planted over ancient terraces on volcanic soils. The vineyards have never been treated and are tended by hand and horse. Grapes are handpicked and left to ferment slowly in terracotta amphorae buried in the vineyard. Gabrio’s 2018 Bianco is 100% Zibibbo macerated on skins for 20 days then aged for several months in buried anphora. It blooms in the glass with salty, maritime notes along with tropical fruits, citrus and savoriness, with a herbal circumference and sensual texture. Bottled unfiltered, with no additions (ever). Don't over-chill – serve at 12 degrees.
