Elevated at 310m asl, this vineyard is super cool, there are two plots of a total of 2.5 acres sloping down towards a seasonal waterway, so the water table is very close to the surface. Elevated at 310m asl, this vineyard is super cool, there are two plots of a total of 2.5 acres sloping down towards a seasonal waterway, so the water table is very close to the surface. The soil is silty and sandy, but with some good structure and chunks or iron stone and different sedimentary rocks. Its an North South row orientation leading to good speckled afternoon sun. Farmed organically, though not certified... Grenache (60%), Mouvedre (20%), Cinsault (20%) were harvested by hand early in the day and put into several fermenters where we foot crushed the bunches and left them covered overnight to soak. The grapes were then gently pressed straight into stainless steel and allowed to naturally ferment in an oxygen depleted environment. Once finished primary ferment they were locked away in stainless and allowed to finish secondary ferment. This wine was aged in stainless steel for 6 months on lees for texture and creaminess. The wine was bottled with zero adds and no filtration and then bottle-aged for 12 months prior to release. -Dave Geyer, Winemaker.
