Tim Ward makes this frizzante with grapes sourced from the iconic Chalmers Vineyard in Merbein. He implements the Ancestral Method – the oldest sparkling technique – in all its risky and difficult-to-control danger, for one hell of a petillant naturel. This is nothing like old-school, too-sweet, easy-to-ignore Aussie Lambrusco – it’s bright, crunchy and fresh, perfumed with barely ripe berry and red fruits. Roughly 55% Maestri and 45% Salomino, hand-picked, whole bunch pressed, wild fermented in old oak, bottled before the end of the primary ferment with a splash of Syrah juice. Unfined, unfiltered, undisgorged. Yum
