Vinaigre de Banyuls
Crafted from white Banyuls wine, this special vinegar is the result of a slow acetification according to an ancestral method known as Orleans process. Songs of citrus with a sweet melody bring a special je ne sais pas to your dishes. 500ml.
They say that you should always cook with the wine that you’d drink with the dish, yet here you will find yourself wanting to drink the vinegar you cooked with too! That’s what happens when you stumble across the vinegars from Nathalie Lefort, made from some of the finest wines in all of France. Lefort is based in the southern part of France, between the coastal towns of Collioure and the Banyuls-sur-Mer, where you can see the Pyrenees from the window. Her vinegars spend 9 months in open wooden barrels with the opening covered by a coloured cloth. This “en plein air” process allows the site's happy microbes to make their magic happen uninterfered. It is then transferred to clear glass demijohns and placed in the sunshine to clarify and stabilise. They are all made from wine donated from Nathalie’s friends, who happen to be some of the best in the biz.
