The fruit (100% Chardonnay) is taken from neighbouring plots, Les Barillers and Les Faucherets, around half way up the famed slopes of Vertus. Lemon oil, gardenia, chalk and profiterole. The plumpest green apple you ever did bite into. There’s body to this, in its mousse and its fruit, and this beautiful weightiness to it makes it such an impressive Blanc de Blancs.

As is the goal with grower Champagne, Pierre and Sophie Larmandier are

taking a more natural approach to their craft than most in the region. They manage their 15 hectares in the south of Côte des Blancs biodynamically, an arduous task in a climatically unfavourable part of the world and opt for a more hands off approach in the cellar. Long, slow ferments and an aversion to dosage make for wines of astonishing length, drive, minerality, purity.
